Pork Chops are no doubt one of my favorites things to grill and eat. So when I seen a nice sized pork roast my mind was immediately made up that I would breakdown the roast into thick slices and give them a smoke bath then grill them over hot lump charcoal for some tasty eating.

Broke down a four bone pork roast into thick slices.

- 1 Bone In Pork Roast (broken down into thick slices)

Lathered all sides with olive oil for the binder.

Fired up my grill/smoker in the main grilling area to about 450° with lump charcoal and mango smoking wood.

Placed the chops opposite side of the lump charcoal & Mango Smoking Wood.

Flipped periodically for even cooking.

Cooked to internal temperature 145° and then seared them directly over the lump charcoal & mango smoking wood for a few minutes on each side.

Removed & rested

Served with habichuelas guisadas and arroz con gandules.
