Seasoning your food is the key to a delicious meal. But it can be tricky to pick out the best seasonings for each type of meat. Some seasoning that are great on poultry doesn’t hold up on red meats. Most everything you cook needs a little salt and pepper- that’s the easy part. But there is a whole other world of flavors and spices that can make seasoning a complicated task. Luckily, there are a few spices and herbs for each type of meat that will never disappoint. To help you figure out how to season your meats, we’ll be explaining what seasoning you should use on different foods.
Poultry:
Chicken and Turkey are naturally mild in flavor, which means you have a lot of liberty in choosing herbs and spices. There are so may spice and herb combinations that will work on poultry. For poultry, we recommend:
- Garlic
- Paprika
- Citrus
- Cilantro
- Rosemary
- Thyme
- Onion
- Tarragon
- Curry Powder
- Cinnamon
- Blend: salt, pepper, onion powder, garlic powder, and paprika
- Blend: oregano, parsley, rosemary, thyme, salt, sage, and pepper
- Blend: turmeric, coriander, cumin, mustard, ground cloves, nutmeg, and cayenne
Beef:
Beef has an extraordinarily bold flavor, so you’ve got to use a seasoning that can hold its own. You’ll want to use a spice/herb that has a strong flavor and will complement the beef without overpowering it. For beef, we recommend:
- Basil
- Cayenne
- Cumin
- Mustard Powder
- Garlic
- Green Pepper
- Oregano
- Onion
- Cocoa Powder
- Blend: oregano, cumin, pepper, mustard, cayenne, and thyme
- Blend: chili powder, cumin, oregano, salt, pepper, garlic powder, and cilantro
- Blend: salt, pepper, paprika, onion powder, garlic powder, ground coriander
Lamb:
Lamb is a rich tasting meat and is very prominent in Greek and Indian dishes. Because of that, using Greek and Indian flavor profiles work well. For Lamb, we recommend:
- Cinnamon
- Cumin
- Curry Powder
- Garlic
- Mint
- Turmeric
- Thyme
- Rosemary
- Blend: dried thyme, dried basil, curry powder, paprika, and cumin
- Blend: rosemary sprigs, garlic cloves, salt, and pepper
- Blend: mint, parsley, garlic, salt, and pepper
Pork:
Like chicken, pork is technically a white meat; however, unlike chicken, pork has a lot of flavor. It’s somewhat sweet, but an overall savory food. For pork, we recommend:
- Allspice
- Caraway
- Celery Seed
- Cloves
- Coriander
- Fennel
- Ginger
- Paprika
- Mustard Powder
- Blend: brown sugar, paprika, salt, pepper, and garlic powder
- Blend: paprika, salt, paper, garlic powder, cumin, ground mustard, cloves, and chipotle powder
- Blend: coriander, ground ginger, paprika, salt, cumin, and pepper
Seafood:
Seafood is a very broad category, including fish and shellfish. Different cuisines season seafood different, so there is a lot of room to experiment. For seafood, we recommend:
- Bay Leaf
- Cayenne
- Dill
- Chives
- Lemongrass
- Tarragon
- Mint
- Blend: salt, pepper, garlic powder, lemon, and parsley
- Blend: celery salt, bay leaf, ground mustard, paprika, and onion powder
- Blend: Lemon, onion powder, fennel, pepper, celery seeds, bay leaf, thyme, and parsley
