In a small bowl, mix together crema, mayo, lime juice and zest, garlic, and salt. Stir until smooth and well combined. Cover and set aside.

Preheat a griddle or cast-iron skillet over medium-high heat and add a small amount of oil or fat of choice.

In a small bowl, mix chopped pineapple and brown sugar.

Pour the mixture onto the hot griddle and cook until golden and caramelized, lightly mashing with a metal spatula.

Remove from heat and set aside.

Divide the chorizo into 4 equal portions.

Press each portion onto a tortilla, spreading the meat all the way to the edges with your fingers.
