Instructions
-
01
Dice the chicken breasts into 2x2 inch cubes and place them in a resealable bag.
-
02
Combine the Greek yogurt and ghost pepper sauce, then pour the mixture into the bag with the chicken cubes.
-
03
Ensure the chicken is fully coated with the yogurt mixture, then seal the bag and refrigerate for 4 hours.
-
04
Take the chicken out of the refrigerator and begin threading the cubes onto bamboo skewers.
-
05
Slice the squash and zucchini into 1/4-inch rounds, then thread them along with the mushrooms onto bamboo skewers.
-
06
Sprinkle the Greek seasoning evenly over all the skewers, making sure to coat both the chicken and vegetables.
-
07
Light a full chimney of charcoal and place it on the charcoal rack inside the cooking chamber of the Smokin' Pro, positioning it on the right side. Raise the charcoal rack to the second-to-last notch for optimal heat.
-
08
Place all the skewers over the hot coals, then open the lid and rotate the skewers every minute. Cook until the chicken reaches an internal temperature of 165°F and the vegetables are nicely charred and tender.
-
09
Remove the skewers from the grill and serve immediately.
