If you’ve got a midweek craving for ribs but are short on time, this hot n’ fast baby back ribs recipe on the Akorn Kamado is perfect. Cooked over lump charcoal with mango smoking wood and seasoned with a flavorful BBQ rub, these ribs are tender with a light smoky flavor and a spicy kick. It’s a delicious, quick-cook method that doesn't sacrifice flavor.

    Start with one slab of baby back ribs (about 2.5 to 3 lbs). Remove the membrane from the back of the ribs by grabbing it with a paper towel and pulling it off.

    Coat both sides of the ribs with 2 tbsp of avocado oil to act as a binder. Then season all sides of the ribs with 3 tbsp of Certified Louisiana Red Dirt Rub and 2 tbsp of Dad’s Jalapeño Lime Seasoning.

    Preheat the Akorn Kamado Grill to 350°F using lump charcoal and mango wood for a sweet, smoky flavor. Let the grill warm up for 20 minutes.

    Place the seasoned ribs directly on the grill grates. Grill each side of the ribs for about 3-4 minutes to get a good sear, then insert the Smokin’ Stone for indirect heat.

    Spritz the ribs every 20 minutes with 1/2 cup apple juice to keep them moist. Continue grilling the ribs hot n' fast for approximately 2 hours.

    During the final 15 minutes of cooking, brush 1/2 cup of BBQ sauce on the ribs to add a sweet and tangy finish.
