Introducing a mouthwatering delight that marries the sweetness of ripe peaches with the smoky allure of bourbon-infused BBQ sauce: Peach and Bourbon Pork Chops. This recipe takes you on a culinary journey back to those warm, nostalgic days of sizzling grills and the aroma of summer gatherings. With each tender bite, you'll experience the perfect balance of fruity tang and rich, bourbon-kissed goodness.

Instructions

    2 hours before cooking - spread the sea salt evenly over the pork chops and leave them in the refrigerator.

    Take the pork chops out and coat them evenly with BBQ rub. Allow them to come to room temperature while we light the grill.

    Light half a chimney of charcoal and place it on the right side of the Smokin' Pro charcoal grate in the cooking barrel. Allow the smoker to heat up to 250 degrees.

    Place the pork chops on the left side of the grill and cook until they reach an internal temperature of 125 degrees. Remove the pork chops, then raise the charcoal grate until it is just below the cooking grate. Leave the lid open to let the fire get very hot.

    In a pan, combine the butter, peach preserves, and bourbon. Stir until the mixture is smooth and the alcohol smell has dissipated.

    Brush one side of the pork chops with the mixture, then place them on the hot coals with the coated side down. Brush the other side while they cook.

    After one minute, flip the pork chops over and brush the newly exposed side with the mixture again.

  8. 08

    Continue flipping the pork chops and brushing them with the mixture until they reach an internal temperature of 140 degrees.
