Rinse the wings thoroughly and pat them dry using a paper towel.

Season both sides generously with lemon pepper, then place them on a cooling rack in a tray. Allow the wings to rest in the fridge, uncovered, for a minimum of four hours.

An hour before cooking, bring the wings to room temperature.

Prepare your grill or smoker for indirect cooking at 250°F.
