Got some leftover brisket? What better way to use it up than in a breakfast scramble? This recipe from ambassador Matt Cass us a great dish for your Sunday morning brunch.Â

Preheat the griddle by turning the burners on HIGH for about five minutes.

Turn the burners down to a medium/high heat and use the spray oil to coat the griddle top.

Put down the first ÂĽ stick of butter to the right side of griddle and add the potatoes on top of that. Cook until potatoes start to develop a golden crust on all sides (about 5 mins).

- 6 Small Red Potatoes (Diced into small cubes)

Turn burners to a medium heat.

Put down the other ÂĽ stick of butter in the center of the griddle and add your onions and bell peppers. Sautee until the onions become translucent and the bell peppers start to become fragrant.

- 1 White Onion (Diced)
- 1 Green Bell Pepper (Diced)
- 1 Red Bell Pepper (Diced)

Combine the potatoes, onion and bell peppers and turn the burners down to a medium/low heat.

Flatten out the potatoes and vegetables to create a “bed” for the brisket to go on top.

Add the shredded brisket to the top of the bed you have made. This will allow the brisket to reheat without drying it out due to direct contact to the griddle.

Close the lid to the griddle and let heat for about 2-3 minutes.

Open the lid and toss everything together. Create an area in the middle of all the ingredients by separating everything into a “donut” shape.

Pour your scrambled eggs in the middle where they may contact the griddle top.

Cook for about 1 minute while you season everything to your liking. I used salt, pepper, and cayenne pepper (for some heat) for this recipe. You may season to your preference.

Once the eggs have been cooking for about 1 minute, toss everything together.

Once the eggs are thoroughly cooked, spread everything out flat into a “bed” again.

Apply your favorite shredded cheese to the top of all the ingredients.

Close the lid to allow the cheese to melt.

Once cheese is melted, remove from heat and let stand for a minute or two before serving.

That’s it!! You’re done! Serve on a plate or bowl, garnish with your chopped green onion and ENJOY!!
